Traditional beef noodle soup found in many places typically uses a basic broth made from beef bones, which can sometimes result in a rather mild flavor. To enhance the signature beef noodle soup, Wu Zan-Hao introduced a fresh twist. He first extracted the essence of the ingredients by simmering them with four types of tomatoes, two kinds of onions, and ribs. After straining the fine residues, he prepared a separate pot of beef broth. Finally, he combined two kinds of base soups, adding tomatoes, beef bones, and beef slices, and slowly simmered to create a clear and flavorful broth with a hint of vegetables and fruits. This intricate process takes 6 to 8 hours. Using a clear broth method, the result is a broth that offers a unique combination of sweetness, fragrance, and clarity, with a lingering aftertaste that leaves no sense of dryness or a parched palate.
